How We Prepare Bellam Kommulu

Flour is mixed with ghee and a little water to form a firm dough. Small portions are shaped into tiny pieces and fried in hot oil until golden and crispy. Meanwhile, jaggery is melted with a little water to form a sticky syrup, flavored with cardamom. The fried pieces are quickly mixed into the syrup so each one is evenly coated, then spread out to cool and set into crunchy clusters.
